Easy-Peasy Peppermint Brownies

So I haven't stopped with the crazy holiday baking yet, but I'm slowing down. Really, I am. Everyone sleeps with a spatula under their pillow this time of year, right? ...Heh heh. Ahem.

Seriously, though--I'm slowing down. Case in point: this weekend I needed to whip up a quick holiday treat for some visiting friends, so I dug through my pantry, pulled out a few brownie mixes and some peppermint extract, and set to work. In total, these brownies took 15 minutes of prep time, and didn't require an extra trip to the grocery store. The best part is that my friends couldn't tell these were simple out-of-the box brownies...not until they read this post, that is (hi, friends!).

To whip up your OWN easy-to-make peppermint brownies:

EASY-PEASY PEPPERMINT BROWNIES

Prepare 2 boxes of brownies, according to package. Then add:

--1/2 tsp of peppermint extract (or more, depending on your mint preference)

Pour into a 9 x 13 pan and bake according to directions. While your brownies are baking:

--Finely crush 4 candy canes (I used Husband's precious Magic Bullet...please don't tell him.)

Take brownies out of the oven and let cool. Slice into squares and place on a baking sheet.

--Melt 1 c of white chocolate chips on medium heat in the microwave, stirring every 30 seconds.
--Stir in 1/2 tsp of vegetable oil with the chocolate to create the perfect "drizzling" consistency.

Drizzle white chocolate over brownies, then sprinkle with candy cane crumbles.
