Who says if life throws you lemons you have to make lemonade? I'd much prefer a sugary springtime cupcake with a lemon zest or two. It's simple. It's stylish. It's sweet. It's sour. Lemon cupcakes. It's what springtime has been missing.
1) Make your favorite lemon cake recipe[http://allrecipes.com/recipe/lemon-cream-cupcakes/detail.aspx ]: cream 1 c of softened butter, 2 c sugar; mix in 3 eggs, 1/2 t lemon extract, 1 t vanilla; combine dry 3.5 c flour, 1 t baking soda, 1/2 t baking powder, 1/2 t salt, add 2 c sour cream; 1 t yellow dye for color.
2) Fill cupcake molds 3/4 full and bake at 350 (20-30 minutes)
3) Make your favorite whitest of white frosting [http://www.wilton.com/recipe/Snow-White-Buttercream-Icing].
4) Cut, zest, and shave lemons for decoration. For a lemon shaving, use a potato peeler. Once you have an adequate shaving, curl it around a pencil or in a coil and let it stay in that position for 10-15 minutes.
5) Frost and decorate!
